I’m trying my best to shake up my go-to weeknight meals – and it’s hard!
When time is a luxury, it’s easy to fall into a rut, saying ‘next week, we’ll eat more veggies… next week it won’t be such a rush.’
So, to help me (and I hope you too), I’ve listed 10 recipes (and stuck this list to my fridge) as a little inspiration.

1. Cape Malay Veggie Curry & Cauli Rice
Tight on time but want to be able to serve a wholesome, preservative-free meal? Then you simply have to try our Pesto Princess fresh cooking sauces. Here is our veggie curry recipe (using our Cape Malay Curry Sauce).
2. Warm Brassica & Butter Bean Salad
This salad goes with literally everything. Try it alongside a roast chicken or sub ingredients in and out depending on what you have to hand. Here’s the winning recipe.
3. Easy Chicken Enchiladas
In this recipe for Easy Chicken Enchiladas, we use our bulk, family-size 1.2kg sachet of Pesto Princess Fresh Tomato Soup (you can keep it stashed in the freezer) and we promise you, it works a treat (and cuts any preparation time). Keen to stay plant-based? Skip the chicken and add stir-fried veggies and black beans. Recipe here.
4. One Pot Vegetarian Lasagne
There’s something ridiculously comforting about a homemade lasagne. And this one needs one pot and minimal fuss. Try it this week!
5. Roast Cauliflower Curry
Roast your veggies for about 20 minutes before adding to our Pesto Princess Butter Chicken Curry Sauce. If you’re in more of a hurry, flash fry whatever veggies you have on hand! We’re not lying, it’s that easy to feed a small family, a crowd or a friend who has just dropped in for dinner. Here’s the recipe.
6. Burst Cherry Tomato Pasta
Roast all the ingredients in a sheet pan, boil some pasta and you’re minutes away from a delicious dinner. Love pasta? This one is for you.
7. Nourishing Buddha Bowl
Buddha Bowls are quite possibly the easiest (and healthiest) dishes to throw together for a totally satisfying mid-week dinner. Stock up on any fresh, seasonal veg; always have a tub of Pesto Princess Hummus on hand and spend just a minute or two slicing and dicing and you’re almost there. They’re also a dream way to use up any leftovers. Here’s our recipe.
8. Homemade Fish Fingers with Pesto
These fish fingers are a big hit with kids (and grown-ups) and, if you can resist eating them all, they make for a superb lunch the following day. Here’s the step-by-step.
9. Loaded Moroccan Veggie Wrap
This recipe is more of a reminder that wraps are the answer to most ‘what’s for dinner?’ problems. Wrap up any roast veggies, add some Pesto Princess Harissa Paste for a spicy kick and depth of flavour. Here’s how we made this Moroccan veggie wrap (but honestly, you can make any wrap you choose and it’ll still be delicious).
10. Plant-powered Bowls
If you’re looking for ways to pack more fresh vegetables into your meals, then you’re going to love these Plant-Powered Bowls.
We made them using the left-over Mexican beans which starred in our recipe for Quick Two-Bean Chilli (Chilli con Carne without the Carne) – knowing that if you do one big cook-up, you’ll earn yourself a night off 😉 Here’s the recipe.
