Marinated Chicken Burgers

The Basil & Lemon Pesto + yoghurt marinade makes for THE most tender and tasty chicken burgers with only five ingredients. Weeknight braai sorted. 

You will need

5 Tbsp full fat plain yoghurt
2 – 3 tsp Pesto Princess Basil & Lemon Pesto
4 x your favourite rolls
8 x chicken thighs or 4 x chicken breasts, skinless and deboned
Fresh rocket
Olive oil
Salt and pepper

We used the Everdure CUBE™ portable braai because it’s so easy to get those coals fired up wherever you are, without the mess!

How to

1. Prepare the Everdure CUBE™ portable braai and let the coals get to a medium to high heat.

2. For the marinade, combine the yoghurt and Pesto Princess Basil & Lemon Pesto. Spoon over the chicken.

3. Braai the chicken until cooked through and still juicy, turning regularly for an even colour.

4. Toast the buns on the braai for a few seconds until golden brown.

Butter the buns, cover one half with rocket leaves, top with the chicken, and serve with an extra dollop of pesto.
