When I’m up against the clock to get supper on the table for a hungry family, I reach for the wraps.

Use our spicy Pesto Princess Chimichurri Sauce as a novel flavour to complement the familiar fillings of ripe avos, lightly-cooked chicken, mozzarella and fresh coriander. Wraps are forgiving, versatile things. You could go all traditional with re-fried beans, sour cream and jalapeños or just use up last night’s roast veggies, along with anything else hidden in your fridge, waiting for its moment to shine.

Char-grill for pretty, but mostly to melt the mozzarella and warm the parcels slightly on these chillsome nights.

You will need

Olive oil, for frying
2 chicken breasts, cooked and sliced
Pesto Princess Chimichurri Sauce
2–4 wraps
1 ripe avocado, chopped
Fresh coriander to garnish
A good handful of mozzarella cheese, grated

How to

1. Drizzle olive oil into a hot pan and fry the chicken breasts until golden on the outside and cooked through.

2. Place your wraps on a board and spread some Pesto Princess Chimichurri on each. How much you use is up to you – it depends how spicy you want them!

3. Top with grated cheese, sliced chicken breast and avocado.

4. To fold, wrap up the bottom first and then the sides and roll. Place your wraps into a hot griddle pan to seal the edges and for those lovely char-grilled lines!

Serve with a side salad, lots of coriander and a drizzle of olive oil.
