Chimichurri Sauce

Argentina, where this sauce hails from, is braai country, just like South Africa. Any piece of meat off the grill would love it if you served chimichurri at its side. For some, putting a fresh sauce on their steak takes a little getting used to, but it’s so worth it. Move over Monkeygland, Barbecue and Creamy Black Pepper! Make way for chimichurri, a gently spiced, fresh new way to enjoy a steak.

Ingredients Onions, vegetable oil (canola seed and/or sunflower seed), apple cider vinegar, fresh parsley, fresh coriander, fresh garlic, salt, fresh green chilli, herbs, ascorbic acid, red chilli, fresh lemon zest

  • Stir chimichurri into mashed potatoes for a twist on the same old same old. Make potato cakes with any leftovers 😉

Add it
Use chimichurri like you use tomato sauce. Just put it on everything. Chimichurri really respects a good piece of meat by complementing its natural flavour rather than smothering it. Try marinating chicken in chimichurri before roasting slowly, in a medium oven.

Freeze it
Spoon sauce into ice cube trays, and once frozen, store in a ziplock bag, for portioning out as needed. The whole jar can also be stored in the freezer without cracking.

Store it
Keep this fresh sauce in the fridge. Always. If your fridge is not that cold, rather store in the freezer to prolong shelf life.

Keep it clean
Always dip in with a clean spoon to avoid contamination. No added preservatives, remember.
