Coconut & Chermoula Fish Curry

If anyone is new to the wonder ingredient that is Chermoula Paste, I urge you to try this super easy and quick fish curry!

Of course, you can add any veggies, herbs and seafood you like but it is superb when kept to the basics, too.

Pesto Princess Chermoula Paste, fish and a tin of coconut milk is all you need!

You will need

1 onion, finely chopped
1 Tbsp olive oil
4 Tbsp of Pesto Princess Chermoula Paste
1 tin coconut milk
600g fish cut into bite size chunks (Mother City Fish is our go-to for seafood and they stock our full Pesto Princess range).
3 cups baby spinach (optional)
Fresh parsley and coriander, finely chopped, to serve
Rice or rotis, to serve

How to

1. Fry the onion in a little oil until soft.
2. Add the Chermoula Paste, stirring so that it does not burn.
3. Add the tin of coconut milk and mix well.
4. Add the fish and simmer with the lid on for 10 minutes, until the fish is cooked.
5. Season with salt and pepper. Add the baby spinach, if using, and fresh herbs and then serve with rice or rotis.
