You’ll need

8 slices soft white bread
4 Tbsp Pesto Princess Basil Pesto*
1 cup cheddar cheese*, grated
4 Tbsp butter* melted
Pesto Princess Hearty Vegetable Soup, to serve

* sub out with any of our dairy-free pesto sauces, plant-based cheese & butter for a vegan version 😉

How to

1. Trim the crusts from each slice of bread (you can keep these to make breadcrumbs).

2. Roll the bread slices slightly to flatten with a rolling pin, or wine bottle.

3. Generously spread Pesto Princess Basil Pesto onto one slice, then sprinkle with approximately two tablespoons of grated cheese. Roll up tightly. Repeat with the remaining bread slices.

4. Heat a non-stick pan to medium-high heat and add a knob of butter or a drizzle of olive oil.

5. One at a time, dip the rolled up slices of bread into the melted butter before placing in the hot frying pan. Cook for a couple of minutes per side until the cheese has melted inside and the outside is golden brown.

Serve warm with your favourite Pesto Princess soup.
