We’re on a mission to bring you wholesome, hearty meals in a blink and our brand new Fresh Tomato Cooking Sauce will do just that. Keep a tub or two in your freezer and you’ll cut back on the prep time for your next lasagna, spag bol, pasta bake, enchiladas or even pizza.
For this riff on a family staple, we’ve used ready prepared ‘meatballs’ from our friends at Urban Vegan, baked them off in our Fresh Tomato Sauce and prepared some polenta for a change.
Perhaps we can have it all: homecooked meals + plenty of time to recharge.
1 500 g tub Pesto Princess Fresh Tomato Sauce
1 packet Urban Vegan Mexican Style Mince Bites
200 g bocconcini (or vegan alternative)
Fresh basil to serve
For the polenta
3 cups stock
1 cup polenta
2–3 Tbsp butter, vegan butter or olive oil
½ cup Parmesan cheese (optional)
1. Arrange the Urban Vegan Mexican Style Mince Bites in a greased ovenproof dish and top with Pesto Princess Fresh Tomato Sauce. Add chunks of bocconcini in between. Bake in a preheated oven at 180°C for 30 minutes until it’s heated through and the cheese has melted.
2. Heat up the stock to a brisk boil on the stovetop. Add the polenta while whisking continuously. Reduce the heat and cook for 20–25 minutes, stirring constantly to make sure it doesn’t catch. Once cooked, add the butter and cheese, if using.
