Your salads and roasted veggie dishes will thank you for splashing this creamy dressing all over them. And if you’ve already registered for Veganuary then you have yourself a full-flavoured, creamy dressing, minus the dairy, to shake things up. We poured ours over roasted butternut, beetroot and feta, then loaded on a handful of rocket leaves for crunch and Vitamin K.

4 Tbsp Pesto Princess Hummus with our own harissa paste
2 tsp Pesto Princess Harissa Paste (optional – add if you love a little extra kick – or mix with our original Pesto Princess Hummus).
Juice from a fresh lemon
Splash of water to loosen
Mix all of the ingredients in a blender or by hand and voilà. Check seasoning and add salt to taste, or more water if too thick. So easy.
