For my part, I’m still on a mission to plan better when it comes to weeknight meals. When I know what I’m cooking and all the ingredients are on hand, regardless of what the day has thrown at me, preparing the evening meal is pure kitchen therapy.
That said, wouldn’t it be nice to do a big cook up and have plenty left over to make nutritious lunches or dinners the following day? We loved the idea so much we’ve created a series of recipes on this theme: Cook Once. Eat Twice.
