No matter how much we love spending time in the kitchen, we all need those effortless dinners that we know how to cook by heart and can throw together in a blink. Enter the one pan wonder. Big on flavour. Simple yet nourishing. No fuss. Hardly any washing up.
#toptip Any combination of veggies will do but be sure to cut root veg or spuds into small chunks so that they roast super quickly!

You will need
4 free-range chicken fillets, quartered or 12 deboned chicken thighs
2-3 Tbsp olive oil
200g tender stem broccoli
100g asparagus, ends trimmed
350g mixed vine tomatoes
1 small red cabbage, halved and sliced into thick crescents
1 jar Pesto Princess Rocket Pesto
Salt and pepper
1. Preheat the oven to 200°C and line a baking sheet with grease proof paper or tin foil.
2. Place the chicken pieces into a mixing bowl and add 4 Tbsp Pesto Princess Rocket Pesto. Combine to coat the meat evenly.
3. Place the meat and vegetables onto the roasting tray and drizzle generously with olive oil, season with salt and pepper and place in oven to roast for ± 15-20 minutes until done
4. Dress with extra dollops of Pesto Princess Rocket Pesto and serve straight from the tray.

Smells like Fresh and bright fruit, lemon drops, green apples, ripe white-fleshed peach and toasted hazelnuts.
Tastes like Very vibrant with its tiny bubbles enlivening the palate. Nice complex lees, nutty, baked almond brioche flavours with the lemon and peach showing well. Brilliant acidity, fresh and crisp on the long aftertaste.
