Have you tried our new Pesto Princess Hummus flavours yet? We can’t decide which one is our favourite so we used all three to make these Roast Veggie & Hummus Bagels.
Easiest desk lunch and 100% plant-based too.
Sending love & lashings of hummus
4 seeded bagels
2 Tbsp olive oil
Veggies for roasting – we used a combo of red peppers, red onions, zucchini and butternut
Salt and pepper
Hummus – we used all three of our Pesto Princess Hummus flavours – Classic, Harissa and Coriander & Chilli
Handful of fresh rocket
1. Preheat the oven to 200°C.
2. Peel (if needed) and dice the veggies. Spread on a roasting tray in a single layer. Drizzle with olive oil and season well. Roast for between 25 and 30 minutes until tender and crispy around the edges.
3. To assemble, slice open the bagel, brush with oil and toast in a pan (or pop it in the toaster).
4. Spread the Pesto Princess Hummus (as much as you like) inside your bagel and top with roasted veg and rocket.
