Happy 2020 #LoyalRoyals!
I know this decade is going to be different. I must have had too good a holiday because I did not feel like coming back to the Palace on Monday 13 January. Instead of fighting this unfamiliar feeling, I took myself out for coffee and sloped into the Palace at 10h00. On Tuesday, a friend popped in with her delightful preschooler and I welcomed the distraction with more coffee!
If you’re also wishing your summer break could’ve been longer, then this simplest of salad dressings will see you being kind to yourself in the kitchen as you ease, ever so slowly, into 2020.

3 Tbsp mayonnaise*
2 tsp Dijon mustard
4 tsp apple cider vinegar
2 Tbsp Pesto Princess Basil Pesto*
Salt and black pepper
* For a vegan version, sub out with egg-free mayo and our Pesto Princess Basil & Lemon Pesto.
Using a blender or just a whisk and a little elbow grease, mix all of the ingredients together until creamy and emulsified. That’s it! Now pour over any salad and enjoy.
