Roasted Nuts with Pesto or Chermoula

If we’re honest, that festive feeling can be difficult to find in shopping malls. It gets drowned out by the din of commercial pressure at this time of year. What makes you stop in your tracks and truly connect with the magic of the festive season? For me, it’s the idea of delighting my friends and family, not with lavish gifts but by finding time to spend with them and just letting them know they’re loved.

And this recipe for Roasted Nuts with Pesto or Chermoula has ‘delight’ written all over it 😉

Serve as part of your festive spread or package them up as a homemade gift.

You’ll need

For each ‘cup’ serving of nuts:

1 cup of nuts (we experimented with mixed raw nuts like pistachios, cashews and almonds but we also tried salted peanuts and they worked well too).
2 Tbsp olive oil
2 Tbsp grated Parmesan
2 Tbsp Pesto Princess pesto sauce or paste of your choice*

*We used Pesto Princess Coriander & Chilli Pesto; Pesto Princess Harissa Paste and Pesto Princess Chermoula Paste.

How to

1. Preheat the oven to 100°C. Line a large baking sheet with parchment paper and set aside. In a small bowl, combine the olive oil, Parmesan and Pesto Princess pesto sauce or paste of your choice. Add the nuts and stir to coat thoroughly. If you are trying lots of different flavours, keep them separate.

2. Spread the nuts on the baking sheet in a single layer and roast for 10 minutes. Give them a stir and roast for another 10 minutes or until golden brown. Keep an eye on them so that they don’t burn.

Serve once cooled or package them up as a beautiful gift.
