You will need

1 tin chickpeas
2 Tbsp Pesto Princess Harissa Paste
2 Tbsp olive oil
Generous pinch of fine Himalayan salt

Optional extras to #spruceyoursoup
Coriander or flat leaf parsley
Coconut cream

And the Pesto Princess Red Lentil Soup, of course!

How to

1. Preheat the oven to 200°C. Place the chickpeas, Pesto Princess Harissa Paste and olive oil in a large bowl. Season well and mix.

2. Spread the chickpeas on a large lined or greased baking tray.

3. Cook in the oven for about 20-25 minutes, checking every 5-10 minutes to ensure they are not over or under done. You can give the tray a shake to ensure even crisping. Remember that they will continue to cook and harden after they are removed from the oven!

Serve with a dash of coconut cream and a sprinkling of freshly chopped herbs… or however you like to #spruceyoursoup!

Feeds two people as a nourishing meal.
